Do you have something particular in mind? Like..pumpkin themed for Thanksgiving? I know some really good simple ones that are always popular then some elegant ones. 20 people is a tall order so I'm thinking you are looking at a cobbler type thing or something that can be expanded to a 13x9 size.

I've never made a cobbler before, what's the usual prep time?
I do recommend doubling the crust called for, though. Otherwise it's a little anemic. I have made this a lot quicker by using this recipe for the crust and using canned pie filling or frozen fruit, thawed with the juices reserved. If you are able to throw a little fresh made whipped cream on it..yummy!
Another super easy, sounds silly, but everyone eats 3 servings recipe, you can make my grandmother's nanner pudding..lol.
Just take a large lasagne pan, layer across it Nilla Wafers and banana slices until you reach the top of the pan, alternating. Prepare 2 large boxes of instant vanilla pudding and pour over to cover. Put in the fridge to set. For the topping you can either use whipped cream (fresh or tub) or you can cover it with meringue. The meringue travels surprisingly well if you make really sure the edges are sealed to the pan. Otherwise it will shrink like crazy. If you use meringue, bake at 350 for about 10 mins or until the peaks turn golden. Then stick it back in the fridge until you are ready to leave. The advantage to the whipped cream is that you can take it separate and apply right before serving.

No theme really but I want to avoid doing something too traditional simply because I want to be sure there won't be 3 of the same dish.
(Thank you for responding!)

Here's a decent cobbler recipe I've used before.
